4 tbsp. oyster sauce

4 red Thai chilies

1 inch size galangal, finely chopped

5 stems of fresh Thai holy basil

8 kaffir lime leaves

Instructions:

1) In a medium bowl, season the minced duck with white pepper and a bit of salt. Mix well and let it marinate for at least 5 minutes. Set aside.

2) Heat oil in a wok over medium heat. Add in the finely chopped garlic, onion and galangal and stir fry for a minute. Toss in the minced duck to the wok and stir fry for five minutes or until the duck is almost cooked.

3) Add in the rest of the seasonings such as oyster sauce, palm sugar and freshly chopped chilies. Stir fry for a couple of minutes. Adjust the taste, if necessary.

4) Stir in the kaffir lime leaves to the dish. Pluck the fresh basil leaves from the stems and tear by hand before dropping to the wok in order to release the fragrant aroma. Turn off the fire and let the residual heat wilt the basil leaves.

5) Serve in a bowl with hot jasmine rice.
